Salame Milano is one of Italy’s best-known salami.
It is made from a paste of pork “rice-grain” minced, and filled in natural or synthetic casings. It is large in size (3/4kg) and is flavoured with salt and natural flavourings, without exaggerating. It is matured for 50-60 days to reach a good firmness of the fatty and lean parts. The colour is bright red, almost a ruby shade.
